Couscous又叫做北非小米,它是由一種叫杜蘭小麥(Durum wheat)製成的米粒,傳統的做法是將杜蘭小麥磨碎後,經過幾次重複的蒸煮和回溫,再用手慢慢搓揉成一顆顆粗粒的「couscous」,為地中海沿岸國家的重要主食。

Couscous不含膽固醇,富含膳食纖維及維他命B6與葉酸,醣份更比麵食低了25%,高營養價值與低卡路里的特色,嚴然成為近年歐美相當受歡迎的健康食材,也因為這種特色,極適合糖尿病患吃食。

Couscous既以作為餐前沙拉,也可以作為主菜或配菜,可以冷食也可以熱食,甚至可做為甜點。Couscous煮法簡易方便,只需將Couscous加入適量的鹽和滾燙的水,蓋上蓋子,靜置5分鐘便可上桌食用。如果作為沙拉食用,調味的方法,建議以北非小米Couscous、蕃茄、小黃瓜、檸檬、甜椒、一些香料和橄欖油一起攪拌均勻,也可以在享用前加入起士或優格一起食用,搭配主食只需淋上肉汁,搭配牛排或羊排一起食用,若以高湯蒸或煮熟,與橄欖油和其他蔬菜拌煮,口味樸實充滿香氣,是個絕對不容您錯過的異國風味菜餚喔。
